Savoy Cabbage Slaw with Lemongrass Beef Jerky, Ginger, Fresh Herbs & Pecans

Ingredients

4 C. savoy cabbage, shredded
1 carrot, grated
1 tsp. ginger, minced
1 tsp. fresno chile, seeded and minced
¼ C. green onions, chopped
2 Tbsp. cilantro, roughly chopped
1 tsp. fresh mint, chopped
½ C. pecans, toasted and chopped
1 C. lemongrass beef jerky, julienned
2 tsp. lime juice
2 tsp. fish sauce
1 pinch kosher salt

Preparation

Combine the first nine ingredients in a bowl and toss to evenly distribute. Season with lime juice, fish sauce and salt. Allow to sit for 5-10 minutes for the flavors to combine, but no more than 20 or the cabbage will wilt.
